Clean Eating Gluten Free Applesauce Waffles

I gotta admit that breakfast in my house can be boring if I don’t plan in advance. And many times I don’t. And frankly, lately my kids have been eating a lot of Nature’s Path cereals. Just because it’s life but giving them organic, whole grain and low in sugar cereal makes me feel better. I just got caught up in a Holiday rush of things and finally it’s over. Hallelujah. I don’t know how you feel but I need a vacation.

To make and freeze a large batch of waffles has been on my mind for a long time. It is so convenient to pull out a waffle, place in a toaster and voila – top with peanut butter, Greek yogurt, fruit and kids love them. I think it’s the fun shape that makes them so appealing.

We do not follow gluten free diet but I’m watching our gluten consumption. Considering my men are eating sprouted whole grain bread regularly, I decided to make these waffles gluten free and clean up my pantry at same time.

FYI oat flour and almond meal can be prepared at home by grinding both in a powerful blender (hello Ninja – seriously as good as Vitamix or Blendtec) or food processor (many readers love the price and functions of it). I always have almond and quick oats on hand. One time I used hazelnut meal I had and waffles were absolutely amazing – tastier than with almond meal. But I gotta admit it’s more expensive, so don’t sweat it.

A combination of applesauce, oats and almonds give the waffles a nutty taste and delicate texture. Usually you need to add oil to the batter to prevent waffles from sticking but I found spraying the griddles with cooking spray each time did the job. Since I already added so much applesauce I didn’t add any oil.

These waffles are crunchy if you cook them a minute or two past the “ready” indicator time, especially fresh. Almost starting to burn look – I love it. Later on they absorb moisture and become softer but still super delicious.

I do not own any fancy round shaped flip around waffle makers so have nothing to compare to. Instead, I have this simple 2 waffles maker me and Alex received as a housewarming gift 13 years ago. It works perfectly fine. Enjoy!

Directions

  1. In a large mixing bowl, lightly beat egg (s). Add flax seed (if using), applesauce, milk, maple syrup, vanilla, baking soda and salt; whisk until well combined. Add oat flour and almond meal, mix well.
  2. Preheat waffle maker. Spray top and bottom griddles with cooking spray each time and make waffles according to your waffle maker's instructions. Amount of batter depends on the size of your waffle maker. I have similar to this one and used about 1/3 cup batter per waffle.
  3. Storage Instructions: Refrigerate in air circulating container for up to a week or freeze for up to 6 months.
