I’ve got some crazy awesome and simple ideas for you (and me) for back-to-school season. Can I say one more time how excited I’m not to hear “I’m bored!” and “What can I do?” anymore until about Christmas time?! Or write this post with 3 boys pillow fighting upstairs?!
So, these back-to-school recipes are created not by me but rather by Safeway’s O Organics line of more than 400 products. All USDA certified organic and affordable (you can see photos of their produce sections I shared before here). I personally salute big grocery stores and chains introducing more and more organic products because that it where us, busy moms, shop and that is how majority of population can become interested in organic products and get healthier. I personally was buying organic cheese and a mom next to me was doing the same and telling me how she is trying to eat more organic. Her cart was half organic, half regular products. So, kudos to Safeway and Albertsons stores for making it possible. That is my honest opinion, period.
There are quite a few awesome O Organics recipes you can pick up ingredients for today at Safeway or Albertsons stores (please buy as many organic as possible!). Starting from top left recipes are:
1. Chicken Salad Wrap – I made it and I swear it was THE BEST chicken salad I ever tried! And it was all healthy and organic! Kids loved it! I’m definitely making these wraps again next week.

The only change I made was swapping apples for grapes because I simply didn’t have grapes but rather an apple tree full of apples in my backyard. Delicious substitute!
I also used only 2 tbsp of mayo vs. 1/2 cup and salad was still super creamy and to-die-for. Alex couldn’t stop raving about it. Oh, and I also just boiled a few chicken thighs and used stock for soup and meat for salad (as always Ukrainian me changes recipes). I do not cook others recipes often because I simply don’t have time and my own head is exploding with ideas. I was so pleased with this recipe.
2. Turkey Pesto Pinwheels – these look so cute and made with only 4 ingredients. I have bought organic deli meat at Safeway with no preservatives. Great alternative to thermos lunches. Gotta keep things fun.

3. Sweet Beet Smoothie – this looks so festive and simple, how didn’t I think of it?! I bet kids would drink it no problem and this smoothie is one of the few ways to have my kids eat beets, besides cooked in borscht.

4. Campfire Smores Smoothie – I was surprised ingredients are all Clean Eating approved in this fun treat smoothie. You could even use non-GMO vegan marshmallow on top. Great for after school.

5. Apple Fries with Cinnamon Dipping Sauce – 3 ingredients including pre-cut organic apples. These would be great for a lunchbox.

6. Strawberry Lemonade Fruit Leather – I gotta say I never made a fruit leather myself because I was simply intimidated by the whole concept. But seeing how easy it is, I will attempt one soon. Kids would go bananas for it because they haven’t had a store-bought one forever.
